Menemen

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 garlic cloves, minced
  • 2 tomatoes, chopped
  • 4 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon Turkish red pepper flakes (pul biber)
  • 4 slices bread
  • Tea, to serve

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and green pepper and sauté until softened.
  3. Add garlic and tomatoes and cook until the tomatoes are soft and slightly broken down.
  4. Crack the eggs into the pan and stir gently until the eggs are cooked to your desired doneness.
  5. Season with salt, pepper, and Turkish red pepper flakes to taste.
  6. Serve the menemen with bread and tea.

Notes

Menemen is a versatile dish that can be customized to your taste. You can add additional vegetables, such as mushrooms or spinach, or herbs, such as parsley or cilantro, to the dish.
