Menemen

Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 green pepper, chopped
- 2 garlic cloves, minced
- 2 tomatoes, chopped
- 4 eggs

- 1/4 teaspoon black pepper
- 1/4 teaspoon Turkish red pepper flakes (pul biber)
- 4 slices bread
- Tea, to serve
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and green pepper and sauté until softened.
- Add garlic and tomatoes and cook until the tomatoes are soft and slightly broken down.
- Crack the eggs into the pan and stir gently until the eggs are cooked to your desired doneness.
- Season with salt, pepper, and Turkish red pepper flakes to taste.
- Serve the menemen with bread and tea.
